How to make five-spice braised pork

1. Wash and remove the hair from the pork belly, put it in cold water and cook it with the skin facing down. The skin can be easily penetrated with chopsticks.

2. Take out the meat and use a bamboo stick to make small holes on the skin. Add some salt and vinegar and spread them evenly on the skin. Pour oil into the pan and use two chopsticks to place the meat underneath. Put the meat into the pan with cold oil and fry over low heat until the skin turns slightly yellow and some small bubbles appear. Increase the heat and fry until golden brown. Take out the meat and soak it in warm water for 30 minutes. Take out the meat and cut it into large pieces. Soak the sandworms and dried shrimps in warm water and set aside.

3. Stir-fry the spices and boil them in a small amount of water for 10 minutes. Chop them and soak the sliced ​​meat for 10 minutes. Take out the meat and add chopped ginger, garlic, and green onions, tie them into a knot and seasonings. Pour in an appropriate amount of spice juice and marinate for 30 minutes. Adjust the taste to slightly sweet or your favorite flavor

4. Arrange the meat slices evenly with the skin facing down, add the dried shrimps and sandworms, and then pour the original sauce on them. Put the steamer on, cover and steam for one hour, take it out and turn it upside down in another bowl. The longer the steaming time, the better.
