How to make Hanzhong dough

1. Put flour and starch into a small bowl

2.1 Take two plates. I used two 8-inch pizza plates. You can also use stainless steel plates. Apply a thin layer of oil on the plates. Pour 2 spoons of batter into the plates. Turn the plates to evenly cover the plates with a layer of batter. The amount of batter determines the thickness of the crust.

3.2 Pour clean water into the batter and stir it into a thin batter. Use a spoon to press and stir to avoid lumps in the flour. After stirring, let it stand for 10 minutes to allow the flour to completely absorb water before stirring again. The small lumps in the batter will basically disappear. After filtering (the dough made after filtering is smoother), it can be used

4.1 It is very hot to peel off the dough directly from the plate taken out of the pot. You can put it in cold water to cool it down (also make sure the bottom of the plate is in contact with the water so that the dough does not get wet), or you can put it under the water pipe and rinse it directly. The dough will be very easy to take out. For the steamed plate, you only need to apply oil to the first one. As long as there is no water on the plate or the plate is dry, you don’t need to apply oil again. If you use the flushing method to remove the dough, you don’t need to apply oil in the future, but you will need to rinse it next time.

5.2 Before that, put water in the pot and bring it to a boil. Put a plate in it (the bottom of the plate is in direct contact with the water. Be careful not to get water into the plate. There should be a little distance between the edge of the plate and the pot so that the steam in the pot can come up). Cover the pot and steam over high heat for 2 minutes. When the batter in the plate solidifies and bubbles appear, you can take it out. Then put the batter in another plate, cover the pot and steam it. Steaming these two plates alternately saves time and gas.

6. Put the taken out dough on a cutting board or plate, brush a layer of oil on it and put one more piece on it so that the dough will not stick together.

7. After all the dough is done, cut it into wide strips

8. Put the cut dough into a bowl, add cucumber shreds, carrot shreds, chili oil, garlic paste (add 2 teaspoons of water to the garlic paste and stir), salt, vinegar, sesame oil, pepper oil, sesame paste (mix it into a thin paste with warm water) and other seasonings you like, mix well and you can eat it
