How to make spicy braised pig's trotters

1. Scrape and clean the pig's trotters, cut them in half (with bones but meat attached), cut off the tendons, marinate with extremely fresh soy sauce and bay leaves for 1 hour and set aside.

2.1 Put it in the pot, add water to cover the pig's trotter by about 4 to 5 cm, pour in a small amount of rice wine, add onion and ginger, then turn to medium-low heat and cook for 30 minutes, then add appropriate amount of soy sauce, sweet bean sauce, soybean paste, appropriate amount of rock sugar, and continue to simmer on low heat for 30 to 40 minutes.

3.2 Cut the green onion into sections and the ginger into slices.

4. If you don't use a pressure cooker, you can use a casserole or a flat non-stick pan. In addition to the seasonings mentioned above, you also need to add enough water to cover all the pig's trotters. Cover it with a lid, bring to a boil over high heat, then simmer over low heat until the meat is as soft as you like, and simmer over high heat until the sauce thickens. It takes a long time, about an hour.
