Spicy Snow Fish Recipe Remove the impurities from the snowfish and clean it. Remove the black skin inside. Cut it into 2 cm pieces. Soak it in water starch. You should use a lot of starch, thicker. Put the snowfish in it and it will be covered with white starch and slightly dripping. Prepare a large bowl and pour in vinegar, if it is rice vinegar, it should be about one bowl, add sugar to half of the vinegar, add appropriate amount of salt, MSG, tomato sauce, stir well, then add a little chili powder, sliced garlic, and put it in the bowl of juice, taste it, it should be sweet and sour. Heat oil in a pan, put the snow fish pieces in one by one when it is 60% hot, fry until golden, and remove when cooked. When the oil is about 80% hot, pour it in and fry it again until it is golden and crispy. Take it out when you hear a popping sound when you tap it with a spoon. Leave some oil in the pan, pour the juice in the bowl and stir-fry until boiling, pour in the fried fish pieces and spread the juice evenly. Also, don’t use too much soup. If you are making a plate of snow fish, a large bowl of soup is enough. Also, the frying time must be short, otherwise the crispy shell of the fish pieces will become soft again. |
