Add 2 spoons of dark soy sauce, mainly for color enhancement, but not too much. 7. Add 1 tablespoon of light soy sauce to enhance the flavor. 8. Add appropriate amount of cooking wine to remove the fishy smell. 9. Add another half spoonful of sugar to enhance the flavor. 10. Bring to a boil over high heat, then turn to low heat and cook for about 15 minutes to make the marinade. 11. After the marinade is cooked, add the cut and washed beef cubes. 12. Cover the pot and bring to a boil over high heat, then simmer over medium heat for 20 minutes. 13. After 20 minutes, turn to low heat and cook for 1 hour. After cooking on low heat for half an hour, add appropriate amount of salt to season (the marinade should be slightly salty). 14. Cover the pot again and simmer on low heat until the beef is cooked (if you can't control the time well, you can poke the meat with chopsticks. If you can poke it in, it is basically done). 15. Take out the braised beef and let it cool down. Put it in a fresh-keeping box, pour a little soup in it, and refrigerate it overnight (for better flavor). 16. Slice the braised beef and pour the sauce on it or dip it in the sauce according to your taste. 17. To preserve the old marinade: Take a portion of the marinade and filter out the spices (not too much, 200-300ml is enough), put it in a fresh-keeping box, let it cool and refrigerate. If you haven’t been braising anything recently, it’s best to keep it in the freezer. When you have time, take it out and cook it and then put it back in the freezer.
