How to make Sichuan red oil wonton

1.1 A stack of wonton wrappers, available in the market.

2.2 400 grams of pork prune meat, blend into puree, mash 15 grams of ginger, add a few peppercorns and a spoonful and a half of salt, mix with 15 grams of warm water, soak for 20 minutes, pour the soaked water into the meat paste, add appropriate amount of chicken essence, pepper, cornstarch, and egg white and mix into wonton filling.

3. Wrap the wonton skin with appropriate amount of meat filling to make wonton dough. I always wrap a lot at a time and put them in the top compartment of the refrigerator. I take them out and cook them when I want to eat them.

4. Pour broth into the soup pot. It can be chicken broth, bone broth, fish broth or seafood broth. I use chicken broth. Add a spoonful of salt, boil over high heat, and cook for one minute before turning off the heat.

5. Chop garlic and shallots.

6. Place the minced garlic at the bottom of the bowl, add pepper oil, a spoonful of red oil, a spoonful of soy sauce, and appropriate amounts of chicken essence and pepper powder; finally, put the cooked wonton into the bowl and mix well, then sprinkle cooked sesame seeds and chopped green onions on the surface.
