7. Next, make the vegetarian sauce. Cut the tofu into slices about half a centimeter thick and fry them in a pan until both sides are golden brown, then remove from the oil and drain.

8. Wash and dice the carrots, and cut the fried tofu into dices of the same size.

9. Heat oil in another pan. After the oil is hot, pour some hot oil on the chives.

10. After frying the scallion and ginger, add the diced carrot and stir-fry for one minute.

11. Pour in the chopped tofu and stir-fry.

12. Add a little thirteen spices and salt for seasoning and turn off the heat.

13. Finally, cook the noodles and serve. Boil water in a pot, then add noodles after the water boils.

14. After boiling, add a little cold water and boil again. Boil three times and the noodles are cooked.

15. Put the noodles into a bowl and add the tomato and egg sauce and vegetarian sauce respectively.

16. Add some oil-sprinkled leeks and serve.
