Steamed Eggplant with Salted Egg Yolk

Salted egg yolk and eggplant can be combined to make a very delicious dish that many people like to eat, that is steamed eggplant with salted egg yolk. The method is very simple. You only need one eggplant and four salted egg yolks. Salted egg yolks refer to salted duck egg yolks. Fry the eggplant in oil before frying. Sprinkle some raw starch on the eggplant strips when frying, then fry the salted egg yolks separately, then pour the eggplant in and stir fry a few times.

4 salted egg yolks, 1 eggplant, cornstarch

1. Prepare the ingredients in advance

2. Crush the salted egg yolk; cut the eggplant into 3-5 cm strips, soak in clean water for 2-3 minutes, remove and drain

3. Spread a layer of cornstarch evenly on the surface of the eggplant after draining the water.

4. Heat the oil in a pan until 60% hot, add the eggplant strips coated with cornstarch and fry until the surface is golden brown, then drain the oil and set aside.

5. Leave a small amount of oil in the pan, put the crushed salted egg yolk into the pan and stir-fry over low heat until small bubbles appear. Then add the fried eggplant strips and stir-fry until the surface is evenly coated with salted egg yolk.

2. Heat oil in a pan until 70% hot, add eggplant strips and fry until cooked through, then pour into a colander.
