Honey Cupcakes Recipe

1. Prepare the raw materials: 4 eggs, honey (50g), white sugar (40g), low-gluten flour (100g), corn oil (20g), milk (20g).

2. Beat the eggs into an oil-free and water-free dish.

3. Beat the eggs and add honey and sugar.

4. Use a handheld electric whisk to beat at high speed until lines appear, then switch to low speed.

5. Beat until the foam is fine and clear lines can be drawn without disappearing easily.

6. Put corn oil and milk into a bowl and pour in a little egg mixture.

7. Use a spatula to stir evenly.

8. Pour the thin egg mixture back into the egg mixture and stir evenly.

9. Sift in the low-gluten flour and mix evenly with a spatula until there is no dry powder.

10. When mixing the batter, you should use the flipping method. Use a spatula to move it from the upper right side to the bottom of the bowl and turn it over. Do not use the circular stirring method, which will cause the eggs to deflate quickly.

11. Pour the evenly mixed egg batter into the paper cups to 80% full. You can use a piping bag or a plastic bag to squeeze it into the paper cups (it must be even to look good. I didn’t make the cups even and the baked ones were uneven)

12. Preheat the oven to 165 degrees and place the baking tray in the lower middle layer of the oven. Bake for 20 minutes (15 minutes is enough, I over-baked mine a little).

13. Take one midway. The temperature of the oven will be different, so adjust it according to the situation in your home.

14. When the surface is colored, you can take it out and let it cool.
