How to make Good Morning Muffins

1. Weigh and prepare the main ingredients for making pancakes.

2. Take a large bowl and put the flour, water, sugar, salt, dry yeast and baking powder into the bowl.

3. Use chopsticks to stir evenly until the dough becomes soft.

4. Install a hook-shaped stirring head on the electric egg beater, and do not use the stirring head for beating egg whites.

5. Beat at the lowest setting for five minutes until the dough becomes elastic.

6. You can pull out the translucent film by hand. Because I wanted to take a photo, I put it on chopsticks.

7. Cover the dough with plastic wrap and ferment it in the refrigerator for 10 hours. If you have free time, you don’t need to refrigerate it and you can ferment it at room temperature or in the oven. Since I am busy at work, I choose to ferment it in the refrigerator.

8. The fermented dough is twice as large as before. Sprinkle flour on the table. The dough is very sticky, so use a spatula to move it onto the table.

9. Sprinkle flour on the dough, and use a spatula or your hands to flatten the dough to release air. Make sure your hands are coated with flour.

10. Dip your hands in flour, divide the dough into four equal parts, shape it into a round shape, and let it rest for 20 minutes.

11. Preheat a non-stick pan without adding oil. Use a spatula to put the dough that has been left to stand into the pan. Because the dough is very soft, it will deform when you hold it in your hands. Fry it slowly over low heat.

12. Because yeast and baking powder are added, the dough will expand during the heating process. I use a spatula to flatten it as much as possible and shape it.

13. Fry both sides until golden brown. There are four pieces in total. Fry them in two pans and place them on a plate.

14. Preheat the pan, add some oil, put an onion ring, beat the egg in the onion ring, fry slowly over the lowest heat. It is best to use small eggs, otherwise the egg white will flow out.

15. Use a spatula to remove the egg white that has flowed out, and fry it slowly until the egg white and egg yolk are solidified, then fry the next one. Because I was having breakfast alone, I made two.

16. Put some oil in the pan, cut a bacon into two slices, put it in the pan, turn it over and fry it until cooked.

17. Use a bread saw to saw the bread in half, or saw it to the end and not completely cut it apart. It depends on personal preference. I make one of each and I will have two pieces left for next time.

18. Take an unsawn bread, put lettuce on it, spread bacon on it, put eggs on it, and place it on a plate.

19. Take a piece of the sawn-in-place bread, put lettuce on it, spread bacon on it, and put eggs on it. Put another piece of bread on the edge, and I squeeze some ketchup on it.

20. A delicious breakfast is ready. It would be nice to have a glass of milk.
