Leek pie! This dish takes a short time to make, which is suitable for people who are busy every day. You can also enjoy delicious leek pie at home even if you are in a hurry! There is no need to wait for this dish, it can be ready in 20 minutes. Served with a bowl of clear soup, it is the perfect match for rice and the first choice for eating with rice.

Take an appropriate amount of yeast according to the amount of flour (the amount is indicated on the yeast powder bag), put it in a small bowl, and use warm water (preferably not too hot to touch) to fully dissolve the yeast in the warm water. Pour it into the prepared basin and mix it thoroughly with the flour. Remember to stir the flour in one direction, otherwise the flour will become loose. The dough should be thinner and thicker than the dough for steamed buns.

4. Cover the flour mixed with yeast with a lid and place it in a warm place waiting for the flour to ferment. I put it on the balcony! If you are in a hurry, you can put it on the electric blanket and the flour will rise faster.

5. This is fermented flour. It is particularly glutenous and will not fall off immediately when picked up with chopsticks. It is very sticky.

6. While the dough is rising, we can prepare the fillings. Fried eggs are also very important. Put oil in a hot pan and when the oil temperature is about 60 to 70 degrees, pour in the beaten eggs. Turn off the heat at this time and use a spatula to stir the egg liquid in the pan constantly. This way, the fried eggs will be very tender and the rice can be broken up directly to avoid having to chop it up again.

7. Pour the fried eggs into the prepared bowl, add appropriate amount of oil, salt, five-spice powder and other seasonings, mix well, then add the chopped leeks, and the filling is ready!

9. Start making pancakes. Put on disposable plastic gloves (I ran out of them at home, so I used convenience bags instead). Apply oil on the gloves so that the dough will not stick to the plastic bag when you grab it. Grab a piece of dough the size of a pancake and place it in the palm of your hand. Press down the middle of the dough with your hand to prepare to put in the filling.

10. Lift the dough around the filling upwards to cover the filling. If you feel that there is too much dough in the middle and it does not break the filling, you can pinch off a small piece of dough. This way, the baked pie will be very thin.

11. Put the wrapped dough into the pot.

12. Press the dough flat with your hands at this time. Don’t think that you are pressing it directly in the pan because the pancake is cold and the top is not hot yet. After pressing it flat, you can turn it over according to the heat of the pan. Once the other side is baked, the pancake is cooked.

13. Press the pie and prepare to flip it over.

14. The pie is out of the pan!
