
This is a common dish that every household in Tianshui knows how to make. For a while, I worked in Tianshui. One winter, after get off work, I was cold and hungry on my way home. A colleague taught me how to make it in just a few words on the company shuttle bus. Back then, there were no smartphones, and everything was slow, but the people and things around you often made you feel warm and comforted.

Potato and Tofu Stew - A quick and easy hot dish for a cold winter's day, heartwarming and comforting. Here are the steps to make it.

Cut the potatoes into chunks and the garlic sprouts into sections.

Pour cooking oil into a pan, heat the pan and add the potatoes, then stir-fry until the potatoes are no longer white in the center and the edges are golden brown. I added the normal amount of oil for stir-frying, but you can add a little more for easier cooking and a better flavor.

Pour in the flour and stir-fry it slowly, like you would stir-fry noodles, until it becomes fragrant and turns golden brown.

Pour in boiling water, add the tofu, and simmer for 10 minutes. The tofu can be cut into cubes, or you can use a spoon to scoop it into the pot like tofu pudding.

Add the garlic sprouts and simmer for another minute or two, until the garlic sprouts are just cooked through, then season to taste.

Add a small half spoonful of light soy sauce or premium soy sauce, and adjust the saltiness to your liking. Stir well, then turn off the heat and serve.
