Steps for making sweet and sour white radish

Wash the 6-pound white radish thoroughly with a brush and dry it. Cut the thicker parts into 8 pieces. I like them thicker, so I cut them into pieces about the thickness of two coins. Add 240 grams of white sugar and mix well. Let it sit for 1 hour to draw out the water.

Prepare the sauce: In a large bowl, combine 80g white sugar, 400g light soy sauce, 160g aged vinegar, 300g rice vinegar, 15 sliced garlic cloves, 3 chili peppers (2 red and 1 green with seeds), and shredded ginger. Stir well and set aside.

Squeeze the excess water from the pickled radishes using a squeeze bag and place them in a large bowl. Pour in the marinade and marinate for half a day. Then transfer them to a jar and refrigerate. Take out as needed.
