
My motto for home-cooked meals is: simple ingredients, delicious and nutritious. This dish is also a quick and easy option for a balanced meal after get off work. I usually like to use pre-braised beef, which saves time but still delivers deliciousness.

Steps for making braised beef with tomatoes (braised beef version)

Wash and slice the ingredients. It would be better to peel the tomatoes (either by scalding them with boiling water or by roasting them over low heat), but I didn't peel them to save time.

Heat oil in a wok.

Add tomatoes and stir-fry, then reduce the heat slightly and continue stir-frying.

Add 2 tablespoons of light soy sauce. Continue to stir-fry until the tomatoes release their juices.

Add a little white sugar (mini spoon).

Add an appropriate amount of water.

No more water than tomatoes.

I was lazy and didn't peel it before, but now my OCD kicks in and I'm digging it out again 😂

Add the beef slices, cover and simmer over medium-low heat for about 3 minutes. I didn't have enough water today, so I need to add more warm water to cover the beef.

Finally, cook until the broth thickens, but be sure not to let it dry out.

Sprinkle with cilantro or scallions before serving.

Key elements for deliciousness: 1. Tomatoes need to be cooked until they release their juices. Heat the pan over high heat, then reduce to medium heat and stir-fry frequently. Add light soy sauce (which is salty) and continue stir-frying to increase juice production. 3. A little sugar is used to enhance the flavor. 2. Don't add too much water; it's better to add more later if needed. The final sauce should be thick.
