
This is a common dish on the tables of southern Chinese people. When I was a child, we only ate it during the Lunar New Year. Because my best friend loves it and wants to learn how to make it, she keeps urging me to post updates every day. So, for summer, I'm sharing a simplified version of Three Delicacies Pork Skin.

Soak the pork skin in cold water for 2-3 hours (soak the wood ear mushrooms at the same time).

Rinse the soaked pig skin several times with cold water.

Place the pork skin in a pot with cold water covering it, add cooking wine, and boil for 5 minutes after the water boils.

Rinse thoroughly with cold water and drain.

Slice the water bamboo shoots (winter bamboo shoots taste best; if unavailable, you can substitute with spring bamboo shoots or water bamboo shoots).

Wash the soaked wood ear mushrooms clean

Put lard in the pot

Pour the water bamboo shoots into the pot and stir-fry.

Add the wood ear mushrooms and continue stir-frying until just cooked.

Pour in the pork skin and stir-fry for a few seconds.

Add water to cover the ingredients (I used chicken broth), bring to a boil over high heat, then simmer over medium heat for 7 minutes (add more water if needed).

Cut the leek into sections

Add salt and MSG (optional) in that order, then add the chives and stir-fry until the chives are just cooked through. Turn off the heat.

Tips for Three Delicacies Pork Skin (Simplified Version)
1. It tastes best paired with winter bamboo shoots. If they are unavailable in summer, you can use water bamboo shoots, spring bamboo shoots, or whip bamboo shoots as substitutes. 2. When soaking the pork skin, be sure to use cold water, not boiling water. 3. Leek sprouts are the soul of this dish and must be added. 4. The secret to deliciousness is to have enough broth so that the pork skin becomes soft, tender, and flavorful.
