Steps for making dry pot potato and chicken wings

Cut chicken wings in half and soak them in water to remove blood. Blanch them in cold water, then add 2 tablespoons of light soy sauce, 1 tablespoon of dark soy sauce, 1 tablespoon of cooking wine, 1 tablespoon of oyster sauce, and a suitable amount of black pepper. First, put the seasonings in a bowl, then add an appropriate amount of scallion segments and ginger. Squeeze the scallion segments and ginger to extract the juice and add it to the sauce to marinate the chicken wings.

Cut potatoes into strips and pan-fry over medium-low heat until the edges are golden brown.

Pan-fry chicken wings until lightly browned on both sides, then remove from the pan.

Remove the excess oil from the fried chicken wings, sauté the scallions until fragrant and browned, then add the potatoes and chicken wings.

Adding a suitable amount of Sichuan peppercorns, dried chilies, white sesame seeds, chili powder, and cumin powder makes it taste even better with cumin seeds.

Before taking it off the heat, drizzle in a spoonful of light soy sauce and add chopped green onions. If you don't have green onions, omit them.
