Steps for making steamed mutton in a bowl

Cut lamb and lamb chops into chunks. Soak in cold water for two hours, changing the water several times.

Rinse several times with running water and drain.

Mince the scallions and ginger. Add chili peppers if you like it spicy.

A little flour

Place the chopped scallions, ginger, and chili peppers on top.

Add some salt and thirteen-spice powder. You can also add a little MSG or chicken bouillon.

Stir gently with chopsticks and the scallions and ginger below.

Heat some oil and pour it over the incense to release its aroma. Don't use too much oil.

Mix well

Pour directly into a bowl

Change the water in the bowl used for mixing the meat, adding a little water to each bowl as well, but not too much.

The lamb was quite tender, so it was very soft after steaming for an hour. Adjust the steaming time according to the tenderness of the meat; it can be steamed for one to two hours.

Just add some cilantro and chopped garlic chives after cooking.

You can eat meat and drink soup, have rice porridge, or eat noodles with naan.

A 50/50 mix of lean and fatty meat is more flavorful.
