Prepare the necessary ingredients: 2 sliced pieces of Huashi dried tofu, 150g sliced lean pork, a small amount of sliced fatty pork, a small amount of minced garlic, and a small amount of chopped red chili pepper. 🤔 I'm using Huashi dried tofu, which is unique to Xiangtan, Hunan. If you can't find it where you live, you can use other varieties of dried tofu, such as Youxian dried tofu from Zhuzhou, Wugang dried tofu from Shaoyang, Baixi dried tofu from Xinhua, Loudi, Dezi dried tofu from Changsha, Lanhua dried tofu from Ningxiang, Changsha, and Jiangxiang dried tofu from Pingjiang, Yueyang, etc. 😂 I've tried them all, and personally, I think Huashi dried tofu and Baixi dried tofu have the best taste. If you don't have any of these, just use whatever dried tofu you have, or order it online.

Heat a pan with a little vegetable oil, then add the fatty pork and render some of the fat over low heat.

Add the lean pork slices directly to the pan, add 3 grams of salt for seasoning, and stir-fry over high heat until just cooked through. 🤔 I didn't marinate the pork here; in Hunan, we don't usually marinate meat before stir-frying. Stir-frying it raw tastes great and is very convenient! Do whatever is fastest!

Add minced garlic and chopped red chili pepper.

Continue to stir-fry over high heat until fragrant.

Seasoning is very simple! Just add 1 tablespoon of light soy sauce and 2 grams of chicken bouillon, stir-fry for five, six, seven, or eight seconds, and it's ready to serve!
