First, prepare the sauce: Slice scallions diagonally into sections and place them in a bowl. Add a pinch of pepper, a pinch of salt (omit if you prefer a milder flavor), 1 tablespoon of cornstarch, 1 tablespoon of light soy sauce, a pinch of dark soy sauce, 1 tablespoon of oyster sauce, and half a bowl of water. Stir well and set aside.

Break the tofu into small pieces. Heat oil in a pan and pan-fry the tofu over low heat until golden brown on both sides. (Don't rush to flip the tofu after putting it in the pan. Wait until it starts to crack, then gently shake the pan to separate the tofu from the pan before flipping it to fry the other side.) Pour in the prepared sauce.

Simmer over medium-low heat for 2 minutes, until the broth thickens, then turn off the heat and serve.
