Fresh bamboo shoots, peeled, blanched in hot water with salt for two to three minutes, then soaked in cold water.

Heat oil in a pan and stir-fry the beef brisket over medium heat until both sides are golden brown.

A spoonful of Pixian chili bean paste is stir-fried until the oil turns red.

Two spoonfuls of pickled peppers (you can use chopped pepper sauce or buy Sichuan pickled peppers online).

Turn the heat to the lowest setting, add one tablespoon of light soy sauce, half a tablespoon of dark soy sauce, and a pinch of white pepper powder.

Add seasonings (bay leaves, dried chili peppers, Sichuan peppercorns, ginger slices, cardamom, etc.)

Add boiling water to cover the ingredients, bring to a boil over medium heat.

Cover the pot and simmer on the lowest setting for 90 minutes.

Once the time is up, add a tiny bit of salt (the fermented bean paste and pickled peppers are already salty), then add the bamboo shoots.

Cook uncovered for 20 minutes on medium-low heat.

Add onions before serving

Then sprinkle with chopped green onions and it's ready to serve.
