Step 1

Blanch the chicken feet and wash them thoroughly.
Step 2

1. Marinate the fish head with dark soy sauce for color; 2. Heat oil in a clay pot, sautΓ© ginger, garlic, and onion until fragrant; 3. Pan-fry the fish head briefly, then add light soy sauce, a little sugar, plenty of pepper, a pinch of salt, a dash of oyster sauce, cooking wine, and hot water up to 2/3 of the fish head's height; 4. Add chicken feet and fish maw, cover, and simmer over medium heat for 8-10 minutes.
