Wash the eggplant thoroughly and cut it into appropriate sizes.

No need to wash, just put the chopped eggplant directly into the oil and fry it.

Eggplant absorbs oil very easily, so frying it briefly in oil first ensures the surface doesn't discolor and softens more easily, reducing subsequent cooking time. However, it's best to rinse it briefly with water after frying, or drain the oil completely. I forgot this step, which resulted in using too much oil later.

Mince the garlic, ginger, and scallions and set aside.

Heat oil in a pan, then add a suitable amount of minced meat and stir-fry until fragrant. My minced meat was marinated in advance with oyster sauce, salt, and light soy sauce.

Add minced scallions and ginger and sauté until fragrant.

Add the fried eggplant and stir-fry.

Add a suitable amount of oyster sauce for flavor, then add a suitable amount of water and simmer for 3-5 minutes to let the flavors meld.

Because the eggplant wasn't drained of oil during the deep-frying process, the oil returned to the pot during the braising, making the dish seem particularly oily. It's delicious, but it would be even better with less oil.
