Freeze the eggs overnight, rinse them with cold water, and then peel them.

Fry the eggs over low heat, then set aside.

Trim the scallions, chop the garlic into small pieces, slice the green chilies into rings, and then stir-fry them in oil in a pan.

Pour in the sauce: two tablespoons of light soy sauce, half a tablespoon of dark soy sauce, one tablespoon of sugar, one tablespoon of aged vinegar, two tablespoons of ketchup, one tablespoon of cornstarch, and a suitable amount of water. Use a small spoon and don't pour in too much.

After the broth has thickened, add the fried egg slices.

Stir-fry evenly until the eggs are coated with sauce, then remove from heat.
