Materials

Soak duck parts in clean water for 1 hour, then rinse thoroughly.

Wash and drain the ingredients, then place them in a pot. Add enough water to cover the ingredients, along with some scallions, ginger, a handful of Sichuan peppercorns, and a drizzle of high-proof liquor around the edge of the pot.

After boiling, remove the ingredients and rinse them with hot water to remove any scum.


Heat lard in a wok, then add scallions and ginger and stir-fry until fragrant.

Add the hot pot base and stir until melted.


Add chili peppers and stir-fry.

Add fermented soybean paste and sweet bean sauce and stir-fry.

Add beer and water, bring to a boil over high heat.

Add the duck parts in order of their cooking time, such as duck gizzards and duck necks. You can add them to the pot first and cook them uncovered over medium heat for 45 minutes.
