Steps for making curry pork belly stew with potatoes

Wash the pork shoulder and cut it into chunks.

Prepare carrots by peeling and cutting them into chunks, and potatoes by peeling and cutting them into chunks. Rinse them in water and drain them.

Prepare onions, garlic, ginger...

I used this curry roux; it has no additives and tastes great.

First, boil a kettle of water and set it aside. Heat oil in a wok, add minced ginger and half of the onion chunks, and sauté until fragrant. Add curry cubes and stir-fry for a few seconds, then add the pork shoulder and stir-fry continuously.

After stir-frying for a few seconds, add boiling water to stew the vegetables. Boiling water helps the flavors penetrate better; the water level should be just enough to cover the vegetables. Add a large spoonful of light soy sauce. If the color is light, add a little dark soy sauce. Add thirteen-spice powder and a small spoonful of sugar. The amount of salt depends on your taste; I didn't add any because I added a lot of curry cubes and soy sauce, so it was salty enough. Cover the pot and simmer over low heat. The cooking time depends on the amount of water and vegetables. If the meat pieces are large, they will need to be stewed longer until tender. Potatoes cook quickly, so if the meat pieces are large, the potatoes shouldn't be cut too small.

While stewing, taste the meat frequently to check its tenderness. If the meat is fully cooked and has a good texture, and there's a lot of broth, turn up the heat to reduce the sauce until it's thick and only a little broth remains at the bottom of the pot. Finally, add the remaining onions and simmer for about 2 minutes. Add MSG before serving. This delicious dish is now ready to eat with rice. The pork shoulder has a unique and fragrant flavor, unlike other cuts of meat.

I declare that this curry pork belly stew with potatoes and carrots is the perfect rice dish! The rich curry, the tender pork belly, and the soft, sweet potatoes and carrots are all combined in one spoonful. Pour it over rice, and every bite is the ultimate temptation of carbs. You'll know once you try it!
