Prepare the following ingredients: a small piece of cured pork belly, some bamboo shoots, some garlic leaves, a few small red chilies, garlic, and dried chilies. ⚠️The bamboo shoots need to be sliced and blanched beforehand! Slice the cured pork belly thinly, cut the garlic leaves into diamond-shaped slices or sections, mince the small red chilies and garlic, and cut the dried chilies into rings. It's best to use pork belly; if you prefer leaner meat, you can choose a cut with more lean meat.

Blanch the cured pork in boiling water first!

Put the cured pork back into the pot and fry until some of the fat is rendered.

Add the bird's eye chili, dried chili, and minced garlic, and stir-fry until fragrant.

Add the blanched bamboo shoots and stir-fry over high heat for 20 seconds.

Add 1 gram of salt, 2 grams of soy sauce, and 1 gram of chicken bouillon to season, then stir-fry until well combined!

Finally, add the garlic leaves and stir-fry for five, six, seven, or eight seconds before removing from the heat and plating! A delicious and tasty dish of stir-fried bamboo shoots with cured pork, a treat only available in spring, is ready! 😍
