Steps for making braised pork ribs with potatoes

Put the pork ribs in a pot of cold water, add cooking wine, scallions, and ginger, and blanch them.

Rinse with hot water and drain.

Prepare bay leaves, star anise, cinnamon, galangal, Sichuan peppercorns, sliced ginger, and crushed garlic.

Cut the potatoes into chunks, rinse them thoroughly, and drain.

Fry in hot oil until golden brown on both sides and remove from heat.

Stir-fry the ribs in oil until they change color.

Add the spices from step 3 and sauté until fragrant.

Stir-fry with fermented soybean paste until fragrant

Stir-fry with rock sugar

Add a small piece of hot pot base to the pot of hot water.

Pour the stir-fried ribs into the pot, bring to a boil over high heat, then reduce to low heat and simmer until the ribs are 90% cooked.

Add the potatoes and cook until tender and the sauce has reduced slightly. Garnish with chopped green onions before serving!
