Slice the beef and add a spoonful of cooking wine.

Two tablespoons of light soy sauce

Add half a spoonful of salt and half a spoonful of Sichuan peppercorn powder. If you prefer it spicier, you can add another half spoonful of Sichuan peppercorn powder for extra flavor.

Mix well and marinate for half an hour

After marinating, heat oil in a wok.

Add two spoonfuls of Sichuan peppercorns after the oil starts to smoke slightly.

Add scallion segments, garlic cloves, ginger slices (add some dried chili peppers if you like it spicy), and a little bit of celery to the pan and stir-fry until fragrant.

A spoonful of fermented soybean paste

After the oil turns red, turn the heat down to medium-low.

Slowly melt the hot pot base. Once melted, add 1.5L of boiling water and simmer over medium heat for 5 minutes.
