How to make Wangpo prawn hotpot

The raw materials used to make Wangpo prawn base are:

Soybean oil, salt, MSG, chicken powder, sugar, star anise, pepper, cinnamon, fennel, white pepper, orange peel, amomum, bay leaf, cumin, angelica, ginger, lily, shallot, garlic, yam, galangal, coix seed, lotus seed, Euryale ferox, clove, longan, nutmeg, jujube, ginkgo, black sesame, coriander, hawthorn, wolfberry, licorice.

Main ingredients: shrimp. For large shrimps, use scissors to cut off the whiskers, claws, eyes and other parts. Use a toothpick to pick out the black thing at the position of the shrimp gun, which is the sand bag on the shrimp head. Wash the processed shrimp with clean water and cut a hole on the back of the shrimp with a knife. Add salt and cooking wine and marinate for half an hour; cut the scallions into sections and slice the ginger and garlic. Salt, cooking wine, oyster sauce, sugar, peppercorns, dried chili peppers, and most importantly, Pixian bean paste.

1. Put oil in the pot, and when it is 50% hot, add peppercorns, dried chili peppers, bean paste, onions, ginger, garlic, and a little sugar. Stir fry constantly to avoid burning.

2. After the spicy aroma comes out, pour in the prepared shrimp, add cooking wine, stir-fry until the shrimp has basically changed color, then add appropriate amount of water (not too much, just enough to cover most of the shrimp), then cover and simmer (the time is up to you).
