3. Chop green and red peppers and garlic

4. Put water in the pressure cooker and add ginger slices, star anise, pork belly, water, salt

5. After the water boils, skim off the foam, add the cut watermelon rind, and cook over high heat for 10 minutes

6. Cut the stewed meat into cubes and put it into an oil-free pot and simmer on low heat.

7. Fan the oil over low heat until both sides are golden brown. A lot of oil will come out! Add minced ginger, Pixian fermented black beans, and Yangjiang fermented black beans

8. After the aroma is fragrant, add the stewed watermelon rind and stir fry

9. There is abundant water in the melon flesh, so don’t add more water! After drying, add chopped green and red peppers

10. After the sweet aroma comes out, add the chopped garlic

11. Serve on a plate
