How to make kelp and soybean

1. Soak the kelp in advance, wash it, drain the water, then roll it into a roll and tie it with cotton thread.

2. Soak 100g soybeans in cold water for 3-4 hours in advance, then control the water and set aside.

3. Peel 4 hard-boiled eggs and set aside.

4. Prepare scallion segments, ginger slices, bay leaves, aniseed, peppercorns, dried chili peppers, cinnamon, and orange peel.

5.Put 2/3 of water into the soup pot, put the spices in step 4 into the pot and turn on the fire.

6. Add 2 tablespoons of dark soy sauce and 3 tablespoons of light soy sauce.

7. Add appropriate amount of cooking wine.

8. Add appropriate amount of rock sugar to enhance the flavor.

9. Add some old marinade, or omit it if you don’t have it. (See here for the recipe of the old marinade)

10. Bring to a boil over high heat, then turn to low heat and cook for about 20 minutes to make the marinade.

11. After the marinade is cooked, use the tip of chopsticks to dip a little bit of the marinade to taste the saltiness. If it is salty enough, put in the kelp rolls. If not, continue to add salt or light soy sauce as needed.

12. Add soybeans.

13. Add the cooked eggs. If you want it to be more flavorful, you can make two cuts on the surface of the eggs.

14. Bring to a boil over high heat, then turn off the heat and simmer for about 1 hour. In order to make the soybeans better flavorful, after stewing and cooling, I soaked the braised kelp and soybeans in the marinade and refrigerated it overnight.

15. Remove the cotton string from the braised kelp and cut it into small rolls.

16. Wash and chop the coriander.

17. Put the chopped kelp and marinated soybeans in a bowl, add coriander, a little bit of chili oil and vinegar and mix well.
