8. [English-style milk chocolate mousse] I only had 64% Valrhona, so I used Valrhona Dark Chocolate. 10g egg yolk, 3g fine sugar, 50g milk, 23g milk chocolate, 9g almond hazelnut chocolate. Beat the egg yolk and sugar, pour in the almost boiling milk and stir constantly, pour it back into the pot and cook until it thickens, then filter it to make the English-style custard sauce.

9. Melt the chocolate in water, add it to the English custard sauce, mix well and let it cool

11. Put the mousse paste into the tower ring, fill it with a piece of almond sponge cake, and then cover it with mousse paste

13. Place half of the candied orange on the tart crust, spread the orange ganache on it, fill it with the English milk chocolate mousse, and sift the cocoa powder on it.
