1. Wash the mustard greens briefly and put them in a basket to dry. It is best to dry them for two or three days to evaporate some of the moisture.

2. Prepare a clean jar, put the wilted mustard greens in it, and pour in hot water at about 50 degrees. You can add some vinegar if you like, and don’t add it if you don’t like. This way you can seal the can for a week.

3. Take out the sauerkraut, wash it and put it in the refrigerator, or stir-fry it directly.
