How to make red bean paste shortbread

1. Soak the red beans the night before and set aside. Steam the red beans in a rice cooker for about 35 minutes, until they can be easily mashed into red bean paste.

2. Make the water-oil dough: melt the butter in a water bath, add water, sugar, and flour, knead into dough, and let it rise for 20 minutes. 3. Divide the water and oil dough and puff pastry into 20 equal portions each.

4. Roll the water and oil dough into a dough sheet, put in the puff pastry dough and wrap it. Place the bag with the mouth facing down.

6. Add 2 to 3 spoons of sugar to the steamed red beans and mash them into red bean paste (I used a rolling pin wrapped with plastic wrap as a tool, for reference). 7. Beat the eggs and brush a layer of egg liquid on the outside. Sprinkle with black sesame seeds.

8. Put it in the oven, mode: lower middle layer, temperature: 200 degrees. Time: 35 minutes. Note: Each oven is different, so it is best to adjust while observing. The red bean paste pies are freshly baked and taste great.
