Steps for making stir-fried eggs with chives
Step 1

Beat the eggs, add a small spoonful of salt, and mix well.
Step 2

Cut the leek sprouts into sections and set aside.
Step 3

Heat oil in a pan until it smokes, then pour in the beaten eggs.
Step 4

Stir-fry after solidification and remove from heat.
Step 5

Place on a plate and set aside; it doesn't need to be fully cooked. (Because it will be stir-fried later.)

Pour a little oil into the pan and stir-fry the chives. Once the chives soften, add soy sauce (optional if you prefer a milder flavor).
