
The pre-cut ribs I bought from Sam were the length I wanted.
Materials
Sweet and sour pork ribs, tender and soft, a favorite with babies. Here are the steps:

Blanch the spare ribs to remove impurities. Wash them, put them in a pot of cold water, bring to a boil, skim off the foam, remove the ribs, and let them air dry slightly. You can use kitchen paper to pat them dry.

Add ginger, minced garlic, and a little oil, then add the ribs and fry until both sides are slightly golden brown.

Add light soy sauce, oyster sauce, Shaoxing wine, scallion roots, and vinegar. Add hot water to cover the ribs. Bring to a boil over high heat, then reduce to medium heat and simmer for 30 minutes until the ribs are tender. Be careful not to let it boil dry.

Open the lid, add salt, and simmer for another 5 minutes. Then reduce the sauce over high heat until it turns a beautiful caramel color. Sprinkle with white sesame seeds. Plate the ribs, garnish with a little chopped green onion, and pour the remaining sauce over the green onion.
