Wash the beef and slice it!

Add minced garlic, minced ginger (the chef said to replace the minced ginger with shredded ginger and chopped green onions at the end, but I added it with the minced garlic; if any experts think it's lacking, please feel free to point it out!), and pepper. I also added a tiny bit of white wine (you can ignore the white wine; I didn't list it in the ingredients!).

Add cornstarch, oyster sauce, soy sauce, and cooking oil (you can substitute sesame oil; I also added a little Sichuan peppercorn oilβwhen cooking, you should always make it taste like what you like! π). Then mix well by hand. Let it sit for 5-15 minutes. If you're in a hurry, you can let it sit for a shorter time. If you're not in a rush, you can even refrigerate it for two hours beforehand.

Add a bowl of cold water to the pot, place a steaming rack and a plate on top, turn on the heat, cover the pot, and let the pot heat up and steam rise.

Then pour in the beef and spread it evenly. Make sure it's spread evenly! If you like it tender, steam for 5-6 minutes; if you like it chewier, steam for 7-8 minutes.

Sprinkle with chopped green onions and shredded ginger after cooking (if you added ginger earlier, don't add it when serving, ladies)! Serve, π Yay!
