Steps for making braised grouper head with tofu

Buy a fresh grouper head at the market; half a head is enough to cook a big pot of fish.

Cutting the fish into smaller pieces makes it more flavorful.

Blanch the fish head in water first; a lot of foam will rise to the surface. Skim off the foam and rinse the fish head for later use.

Add lard, then add ginger, garlic, and onion as desired.

Add the cleaned fish head and fry in oil until golden brown on both sides.

Add two tablespoons of cooking wine, two tablespoons of soy sauce, one tablespoon of chicken bouillon, one tablespoon of soybean paste, one tablespoon of salt, and one tablespoon of oyster sauce in that order, and bring to a boil over high heat.

Add tofu and simmer over low heat for 5 minutes.

Depending on personal preference, you can stew it for a while longer. Once the fish is tender, remove it from the heat, add chopped green onions, and the delicious dish is ready!
