Braised Mullet with Fermented Rice Wine by wqy: Recipe Steps

Clean the mullet by removing the scales, gills, and internal organs (I cut the fish into pieces, but you can also just score it without cutting it into pieces). Wash the ginger slices, remove the stems and seeds from the chili peppers, wash the scallions, remove the roots, and chop the scallions.

Heat oil in a pan, add ginger slices and sauté until fragrant.

Pan-fry the fish until golden brown on both sides.

Add an appropriate amount of hot water, 2 tablespoons of cooking wine, 1 tablespoon of light soy sauce, 3/4 tablespoon of dark soy sauce, 2 tablespoons of fermented rice wine, and chili peppers. Bring to a boil.

Once the fish has browned and absorbed the flavors, add salt to taste.

Plate and sprinkle with chopped green onions.
