Steps to make the tenderest stir-fried beef with cilantro

This is a beautifully cut piece of beef. I love this kind of freshly slaughtered, whole-cut beef. Just take a whole piece like this. Cut it along this pretty cut surface. Beef cut this way is naturally tender.

Slice the beef across the grain. You need to cut along the vertical lines. Like this cut surface.

Baking soda. I added this much to my 1.5 jin (750g) of beef. I think this amount of baking soda is just right for my family. It makes the beef tender yet still retains its meaty texture. It doesn't lose the natural meatiness of the beef.

Rub the spoonful of mixture onto the spoon. Mix it well with your hands.

Add 4 tablespoons of sesame seed oil directly to the mixed beef.

Mix it thoroughly to seal in the tenderness of the beef.

Mix the beef thoroughly. Let it marinate for half an hour before stir-frying.

Prepare some side dishes: cilantro, carrots, bird's eye chilies, and a whole head of garlic, crushed.

Heat a pan with cold oil. Add the beef slices and stir-fry until they are separated.

Once the beef changes color, add the other vegetables and stir-fry together briefly.

The beef is already well-marinated. Now, it only needs a little seasoning before it's ready to serve. Add some dark soy sauce, salt, and MSG, stir-fry briefly, and finally sprinkle with cumin powder before taking it off the heat – it'll be incredibly fragrant!

It's done! Spicy and cumin-flavored stir-fried beef with cilantro. It's really tender and delicious. If you prefer the beef even more tender, you can add a little more baking soda.
