So I made him this completely vegetarian stir-fried gluten puffs. After trying it, he said: "Wow, well-made vegetarian dishes are even tastier than meat! I want another bowl of rice!" What I mean is, with the right combination of ingredients and proper seasoning, even vegetarian dishes can be delicious. This dish, for example, has a complex flavor profile of rich soy sauce and fragrant oil. Each bite is soft and crunchy, fragrant and savory—how could it not be perfect with rice? 1️⃣ Soak the fried gluten and wood ear mushrooms until softened, then drain. Cut the other ingredients into chunks or slices, and chop the scallions into sections. 2️⃣ Mix the above seasonings together to make a sauce. Blanch the shiitake mushrooms for 1 minute, and the bamboo shoots and carrots for 2 minutes, then drain.

3️⃣ Sauté the white parts of the scallions until fragrant, then add all the ingredients and stir-fry over high heat for 1 minute. 4️⃣ Pour in the sauce and stir-fry for another minute to allow the flavors to meld and the ingredients to color. Finally, add the cornstarch slurry and stir-fry until the sauce thickens. Garnish with chopped scallions before serving.
