1. Place the firm tofu on a cutting board and cut it into rectangular pieces that are 5 cm long, 2 cm wide, and 1 cm thick. Soak the tofu in lightly salted water for 10 minutes, then drain.

2. Wash and finely chop the scallions, mince the ginger and garlic, put them in a bowl, add soy sauce, oyster sauce, a little sugar and white pepper powder, stir well with chopsticks to make a sauce.

3. Place a slice of bacon on the cutting board and gently absorb the surface grease with kitchen paper. Place a piece of tofu on one end of the bacon and roll it tightly from one end to the other, securing it at the seam with a toothpick to prevent it from unraveling.

4. Place the starch in a plate, roll the rolled bacon tofu in the starch to coat it evenly.

5. Pour some cooking oil into a frying pan and heat it over low heat. Add the bacon and tofu rolls and fry until golden brown on all sides, about 2 minutes per side.

6. Pour in the prepared sauce, stir-fry over low heat until each bacon and tofu roll is coated with the sauce, and continue to fry for 1 minute until the sauce thickens slightly.

7. Turn off the heat, remove the toothpicks, place the bacon tofu rolls on a plate, and sprinkle with chopped green onions.
