Steps for making stir-fried celery and tofu skin

Soak the dried bean curd sticks in warm water until there is no hard core (usually 3 hours), then drain and set aside.

Remove the strings from the celery and cut it into small pieces.

Prepare minced garlic.

Heat oil in a pan over medium heat, add minced garlic and sauté until fragrant.

Add celery and stir-fry for about 2 minutes, then add sugar.

Add the dried bean curd sticks and stir-fry for about 1 minute, then add salt to taste.

Add bell peppers (optional), cover and simmer over medium-low heat for about 2 minutes (if the celery hasn't released its juices, you can add some broth or water). Uncover, stir a few times, then turn off the heat, plate, and serve.
