
I'm sharing a healthy, low-oil recipe for pork belly.
Materials
Braised Pork Belly Rolls with Lettuce: Recipe Steps

Choose pork belly with alternating layers of fat and lean meat; you can remove the skin or leave it on, depending on personal preference.

Cut into pieces 2-3 cm long and wide.

Blanch the vegetables in cold water with scallions, ginger, and cooking wine for three minutes after the water boils.

Prepare all ingredients

Pan-fry the pork belly over low heat for 5 minutes to render some of the fat.

Melt rock sugar in oil over low heat until it turns caramel color, then add pork belly to coat with the caramel.

Add all the spices, scallions, ginger, garlic, and dried chili peppers and stir-fry until fragrant.

Add hot water to cover the pork belly, then add light and dark soy sauce. Bring to a boil over high heat, then reduce to medium-low heat and simmer for 30 minutes.

Remove the spices and continue simmering for 30 minutes.

Pork belly wrapped in lettuce leaves and rice is fragrant but not greasy, and paired with winter melon soup, it makes for a delicious meal.
