Prepare the ingredients: Wash the fresh shrimp thoroughly. (I used local prawns here, which were kept alive for two days and had very clean veins, making them easy to remove when eating. If you're unsure, you can remove the veins now.) Cut the scallions into three sections; cut the ginger into large chunks; and slice the shallots/onions into thick slices.

Any pot will do. Line the bottom with scallions, ginger, and shallots/onions. Then, place fresh shrimp on top.

Cover the pot and simmer over low heat for 3-5 minutes. (Adjust the time according to your personal taste; the shrimp will be cooked through after 3 minutes as they will have changed color. I like it cooked through after 5 minutes.) Uncover the pot; the shrimp will be perfectly cooked. Remove them one by one. Shrimp done! ✅

Prepare the dipping sauce: 1️⃣ Here's an easy version: Use the leftover ingredients from the braised shrimp pot, along with a little water. Add two tablespoons of light soy sauce and one tablespoon of oil, and heat over low heat until it boils. The scallion and ginger dipping sauce is ready! ✅ 2️⃣ There's also a homemade dipping sauce made with light soy sauce, oyster sauce, minced garlic, and chopped chili peppers, poured over with hot oil. This is a bit more complicated; choose according to your personal taste.

Bake shrimp and whelk together for 8 minutes. The whelk needs more time than the shrimp. Place an onion slice at the bottom to prevent it from burning.
