💁Prepare the following ingredients: 1 eggplant, 6 green chili peppers, and a little garlic.

Dice the eggplant, chop the green chili peppers, and mince the garlic.

Heat the pan without oil, then add the diced eggplant and stir-fry over medium-low heat. Remember not to use high heat to prevent the eggplant from burning.

While stir-frying, add a little oil to help the eggplant release its moisture. Continue stir-frying until the eggplant softens, as shown in the picture. Remove from heat and set aside.

Heat oil in a wok again, add minced garlic, and sauté over low heat until fragrant.

Add the chopped green bell peppers and stir-fry over high heat until just cooked. If you used less oil earlier, you can add a little more here.
