Steps for making Supreme Minced Meat Eggplant

Cut the eggplant into cubes without peeling, add a small spoonful of salt, mix and marinate for 10 minutes. It will release water. After marinating, rinse with clean water and pat dry with kitchen paper.

Choose meat with a fat-to-lean ratio of about 1:3. Add a little cooking wine, soy sauce, a quarter teaspoon of salt, two drops of sesame oil, and a small spoonful of cooking oil according to your taste. Mix well and marinate for 10 minutes.

Next, add our green and red peppers, scallions, ginger, and garlic. If you like spicy food, you can add some bird's eye chilies; otherwise, you can leave them out.

Add a dried chili pepper and a handful of minced garlic to the pan and stir-fry the minced meat.
