What are the authentic methods of making red wine pear?

Ingredients

Main ingredients: 400g pear; 500ml wine (red wine can be reduced to 170ml-230ml) Ingredients: 4-6 tablespoons white sugar (slightly sweet) 10-12 tablespoons (crisp and sweet) ①; 200ml-250ml purified water (350ml-450ml if using dry red wine)

Preparation method

Correct approach:

1. Peel the pear, cut it in half and chop the core.

2. Put water in the pot, bring to a boil over high heat, add red wine, sugar, and then put in the chopped pears. When the water boils again, turn to the lowest heat and simmer for 10-15 minutes②.

3. After stewing, put it into a container, wait for it to cool down, cover it, and put it in the refrigerator and soak it with the soup (it is best if the soup covers the pear in the container by 3 cm) for at least 6 hours. The taste is best after 24 hours.

Restaurant method (i.e. soaking type): (not recommended)

1. Peel the pear, cut it in the middle, chop the core, and cut it into 0.5 cm thick slices;

2. Put water in the pot and bring to boil. Then add the chopped pears, blanch them, rinse them with water, drain the water, and put them in a bowl;

3. Take 500g of red wine, pour it into a basin and soak the pears for 48 hours;

4. When eating, take out the pear and add lotus root slices to the platter.

Note: ① You can also add rock sugar or cotton sugar according to your personal preference. ②The stewing time depends on personal preference.

Production method 2
