3. Pour a small amount of oil into the wok, add ginger slices and sauté until fragrant, then add winter melon and maitake mushroom, then add filtered maitake mushroom water, enough to cover half of the vegetables, then add soy sauce, salt and sugar, mix well, cover with lid and simmer over medium heat for 3 minutes, wait until the soup is slightly dry, add bean sprouts, sprinkle with chicken essence, stir and serve
