First, slice the scallions diagonally and set aside.

Prepare the sauce in advance: In a bowl, combine 2 tablespoons of light soy sauce, 1 tablespoon of oyster sauce, 1 teaspoon of salt, 1 tablespoon of balsamic vinegar, 1 teaspoon of white pepper powder, 1 teaspoon of matsutake mushroom seasoning, 1 tablespoon of sugar, 1 teaspoon of potato starch, and an appropriate amount of purified water. Stir well and set aside.

Cut a block of tofu into a piece about one finger's width thick, then cut it in half again into rectangular pieces. Set aside.

First, grease the pan, then add cold oil. Next, put the chopped tofu into the pan and sautรฉ until fragrant. (Don't stir it yet, but you can shake the pan to help it set and prevent it from sticking.)

Fry until lightly golden brown, then remove and set aside.

Leave some oil in the pan, then add the shredded white parts of the scallions and stir-fry until fragrant.

Next, add the pan-fried tofu cubes, stir-fry for a couple of seconds, turn off the heat, pour the sauce along the edge of the pan, turn the heat back up and stir-fry for a couple more seconds to coat the tofu with the sauce, then remove from the pan immediately. Done!
